Mainly characterized for its spices, frequent use of dairy products, the clay oven, tawa griddle and wheat-based staples.
Cooking is based around rice, lentils, and stews. Dishes such as Dosa , idli, saaru/rasam, and huli/sambar are all from the South.
Indian sweets and desserts also called Mithai. Many are flavored with almonds and pistachios, spiced with cardamon, nutmeg, cloves and black pepper, and decorated with nuts, or with gold or silver leaf.
